Oat biscuits: Pre-heat oven to 180’C and line a 20cm square baking tin with greaseproof paper and rub with olive oil. In a food processor pulse together 100g soft butter, 100g self-raising flour, 100g Overnight Oats Mix, 100g raw nuts and seeds/dried fruit until the mix comes together and away from the sides. Then pulse in 100g honey until fully combined. Transfer the oat mix into the lined tin and flatten the edges. Bake for 15-20 minutes or until golden. Remove from oven and slice into 16 squares and leave to cool in tin.  Perfect for lunchboxes!

Cooked porridge: In a small saucepan, bring 1 cup Overnight Oats Mix and 2 cups water (or milk) to a boil. Reduce heat and cook, stirring occasionally, until oats are soft and have absorbed most of the liquid, about 5 minutes. Remove from heat and let it stand for 2 minutes. Thin with a little more milk or water, if desired. Serve with toppings of your choice.
